This is a Greek okra stew recipe known locally as bamies latheres. It’s a traditional dish cooked in a rich tomato and olive oil-based sauce.

It’s easy to make and vegan friendly, though if you don’t mind a bit of cheese, it goes great with a side of feta. Enjoy!

Ingredients MetricUS Customary 1x2x3x800 gr okra400 gr crushed tomatoes600 ml vegetable stock140 gr onion chopped100 gr carrot cut into small cubes120 ml white wine1 tbsp tomato paste1 tbsp granulated sugar½ tbsp smoked paprika¼ tsp dry oregano5 mint leaves choppedsaltpepper100 ml olive oil
Instructions Heat a deep saucepan over medium-high heat.Add the olive oil, carrot, and onion and sauté for 2-3 minutes until soft.Add the okra together with the tomato paste and sauté for another 2 minutes.Deglaze with the wine and let all the alcohol evaporate.Add the vegetable stock, the crushed tomatoes, paprika, oregano, sugar, mint leaves, salt, pepper and mix.Let it simmer for about 25-30 minutes, until the sauce is completely set.Serve the okra warm.

NotesChef’s tip: When the okra is ready, do not stir with a spoon, but by shaking the pot so that they do not dissolve.
