I get comments all the time from people LOVING my lemon curd recipe in my book The 30 Day Ketogenic Cleanse but they ask why it crystalizes after it cools. This happens if you use erythritol as a sweetener. But I have a solution for all of you!
When making my lemon curd or this new Maple Curd recipe, always use allulose. Allulose melts and acts like sugar without effecting blood sugar or insulin and it is zero calories!
My Maple Curd is so delicious! We love it on my protein sparing Dutch Baby pancakes!
If my maple curd gets too lumpy when cooking it, do not worry. It happened to me the first time! Put the curd in a small food processor and puree until smooth.

I have done a lot of detective work and found the lowest prices on for all of the products I use and love. Everything from food, pantry items, kitchen tools, supplements, and skin products are on my list.
I rarely waste time in the grocery store because I find everything online for a way better price!
All you have to do is click on the words in my recipes and it will take you right to the correct item. If you add them to your cart I get a tiny commission that helps me afford to keep practicing recipes (Recipe experimenting can costing me a fortune!…but I love helping!).

Maple Curd

Combine allulose, almond milk, 4 eggs and maple extract in heavy medium saucepan and whisk to blend; add coconut oil. Whisk constantly over medium heat until mixture thickens and coats back of spoon thickly (do not boil), about 5 minutes.Pour mixture through strainer into medium bowl. Place bowl in larger bowl filled with ice water and whisk occasionally until maple curd is cooled completely, about 15 minutes.NOTE: if the curd gets too lumpy, do not worry. It happened to me the first time! Put the curd in a small food processor and puree until smooth.Can be made 1 day ahead.Tastes great on my protein sparing Dutch Baby Pancakes!
